Sometimes while I wait for AI renders or stare at another HCU checklist, I get the munchies. Not a full-on meal, just a "quick fix" that won’t derail the low-carb train.

Just Saying... Mini Keto Pizzas While the AI Does Its Thing

Lazy Day Keto Pizza hack for hungry content creators who are short on time...

Enter: my Mini Keto Tortilla Pizzas — perfect for that fast, cheesy, comfort food craving.

Here's what I used (and yes, it made two little personal-sized pizzas!):

Mini Keto Pizza Ingredients (per tortilla)

  • 1 low carb street taco-size tortilla (I used La Banderita Zero Net Carb)
  • 2 tbsp Great Value pizza sauce
  • 4 small Hormel pepperoni slices
  • 1 oz shredded mozzarella cheese (Publix brand)
  • Sprinkle of oregano (before and after cheese!)

How I Made It:

    1. Heat a non-stick skillet over medium heat.
    2. Add the tortilla and let it crisp for about 1–2 minutes per side, until it's firm to your liking.
    3. Spread the pizza sauce evenly over the top.
    4. Add the pepperoni slices.
    5. Sprinkle with oregano.
    6. Top with shredded mozzarella, then add a bit more oregano.
    7. Turn off the heat and cover the skillet with a lid to melt the cheese.
    8. Once the cheese is gooey and bubbly—serve and enjoy!

I ate them straight off the plate and didn't miss a traditional crust at all. They hit the spot and took less than 10 minutes total.
